Ingredients :

For the creamy soup:
🌱 500g of fresh or frozen peas
🧅 1 finely chopped shallot
🧄 1 clove of garlic, crushed (optional)
🫒 1 tablespoon of olive oil
🍃 10 fresh mint leaves
🥛 500 ml of vegetable stock
🧂 Salt and pepper, to taste

For the topping:
🌱 A few mint leaves for decoration
🍋 A drizzle of crème fraîche (optional) or plant-based cream


Instructions :

Preparing the vegetables 🧅:
1️⃣ Heat a stainless steel pan over medium heat with a tablespoon of olive oil. Sauté the shallot until translucent. You can add the crushed garlic at this point if you want a stronger flavor.

Cooking peas 🌱:
2️⃣ Add the peas to the stainless steel pan with the shallot. Stir well for a few minutes to coat them with the aromas. Pour the hot vegetable stock over the peas and simmer for about 10 to 15 minutes, until the peas are tender.

Blend for an ultra-smooth, velvety texture 🥣:
3️⃣ Once cooked, transfer the peas and their broth to a blender or blend directly in the pot using an immersion blender. Add the fresh mint leaves and blend until silky smooth.
4️⃣ Taste and adjust the seasoning with salt and pepper according to your preferences.

Dressage 🍴:
5️⃣ Pour the hot soup into bowls or deep plates. Garnish with a few mint leaves and a drizzle of crème fraîche or plant-based cream for an elegant and indulgent result.
