Ingredients :
For the pie:
🥚 1 puff pastry (or shortcrust pastry, depending on your preference).
🧀 150g of fresh goat cheese or goat cheese log.
🥛 200 ml of liquid fresh cream.
🍃 2 eggs.
🧂 Salt and pepper, to taste.
🌱 A few sprigs of chives (optional).
For the asparagus garnish:
🥬 500g of green asparagus (fresh preferably, but frozen is possible).
🫒 1 tablespoon of olive oil.
🧂 A pinch of salt.
Instructions :
Preparing asparagus 🥬:
1️⃣ Wash the asparagus and cut off the tough ends.
2️⃣ Heat a stainless steel pan with a little olive oil. Sauté the asparagus for 5 to 7 minutes over medium heat, until lightly browned and still crisp. Season with a pinch of salt and set aside.
Preparing the pie 🧀:
1️⃣ Preheat your oven to 180°C (thermostat 6).
2️⃣ Roll out the puff pastry in a tart tin. Prick the base with a fork to prevent it from puffing up during baking.
3️⃣ In a bowl, whisk the eggs with the crème fraîche. Season with salt and pepper, then add a few sprigs of chopped chives for a touch of freshness.
Assembly 🍴:
1️⃣ Spread the sautéed asparagus over the dough.
2️⃣ Crumble or slice the goat cheese and arrange it on top of the asparagus garnish.
3️⃣ Pour the egg and cream mixture on top, making sure to spread it evenly.
Cooking 🕙:
1️⃣ Bake the tart at 180°C for 30 minutes, or until the pastry is golden brown and the filling is set.
2️⃣ Let it cool slightly before serving.
