Ingredients :
For the dough (homemade option):
150 g of flour
75g of cold butter, cut into pieces
1 pinch of salt
3 to 4 tablespoons of cold water
For the topping:
🐟 150g of fresh or smoked salmon, cut into strips.
🥬 250g of green asparagus (about 1 bunch), cleaned and cut into pieces (keep the tips whole).
🧅 1 finely chopped shallot.
🍳 4 eggs.
🥛 200 ml of fresh cream (or plant-based cream).
🧀 50g of grated cheese (optional, such as Gruyère, Comté or Parmesan).
🧂 Salt, pepper and nutmeg (to taste).
Instructions :
1️⃣ Prepare the shortcrust pastry (if homemade) 🥮:
- In a bowl, mix the flour and salt. Add the cold butter and rub it in with your fingertips until the mixture resembles coarse breadcrumbs.
- Gradually add the cold water to form a smooth dough. Do not overwork the dough to prevent it from becoming elastic. Wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.
2️⃣ Prepare the asparagus 🌱:
- Blanch the asparagus in a saucepan of boiling salted water for 3 to 4 minutes, until slightly tender but still crisp. Then plunge them into ice water to preserve their color. Drain and set aside.
3️⃣ Pre-bake the dough 🥧:
- Preheat the oven to 180°C (fan oven).
- Spread the dough in a buttered and lightly floured tart tin. Prick the base of the dough with a fork and pre-bake it in the oven for 10 minutes, using baking beans or dried peas to prevent it from puffing up.
4️⃣ Prepare the topping 🐟:
- In a stainless steel pan, sauté the shallot in a drizzle of olive oil until translucent. Add the salmon pieces (if fresh) and brown them lightly. Then remove from the heat.
- In a bowl, beat the eggs with the crème fraîche. Add a pinch of salt, pepper and a pinch of nutmeg to enhance the flavor.
5️⃣ Assemble the quiche and bake 🍳:
- Arrange the salmon pieces in the pre-baked tart shell, add the asparagus, arranging them attractively (keep the tips for a pretty presentation). Pour the egg and cream mixture over the top.
- Sprinkle with grated cheese if using.
- Bake the quiche in the oven for 30 to 35 minutes, until it is golden brown on top and the cream is set.
6️⃣ Serve and enjoy 🍴:
- Let it cool slightly before serving. Accompany this quiche with a small green salad for a touch of freshness.
