Ingredients :

For the risotto:
🌱 300g of Arborio rice (risotto rice)
🥬 300g of green asparagus (about one bunch)
🧅 1 shallot, finely chopped
🧄 1 minced garlic clove (optional)
🫒 2 tablespoons of olive oil or a knob of butter
🍷 100 ml of dry white wine
🍲 1 liter of hot vegetable broth (keep it on the stove to keep it hot!)
🧂 Salt and pepper, to taste

For the finishing touch:
🧀 50g of grated parmesan cheese (and a few shavings for decoration)
🥛 1 tablespoon of mascarpone (optional, for an even creamier risotto)
🍋 The zest of one lemon (optional, for a touch of freshness)


Instructions :

1️⃣ Prepare the asparagus 🌱:

  1. Peel the base of the asparagus if they are fibrous. Cut them into pieces (keep the tips whole for presentation).
  2. Blanch the asparagus in boiling salted water for 3 minutes, then immediately plunge them into ice water to preserve their bright green color. Drain and set aside.

2️⃣ Preheat and fry the rice 🍚:

  1. In a stainless steel frying pan or sauté pan, heat the olive oil (or butter) over medium heat. Add the shallot and garlic (if using) and cook until softened and translucent.
  2. Next, add the arborio rice and mix for 2 minutes, until the grains become slightly translucent at the edges (this is the stage where they "absorb" the flavor).

3️⃣ Add the white wine and stock in several stages 🍷🍲:

  1. Deglaze with the white wine and stir until it is completely absorbed.
  2. Add a ladleful of hot broth and stir gently. Repeat this process, adding the broth little by little, one ladleful at a time. Wait until the liquid is absorbed before adding more. This process takes about 18 to 20 minutes, and it's what makes the risotto creamy and smooth.

4️⃣ Stir in the asparagus and finish 🥣:

  1. When the rice is al dente (still slightly firm to the bite), add the pieces of asparagus (reserve a few tips for decoration) and mix gently.
  2. Stir in the grated Parmesan, mascarpone (if using), and, for a fresh touch, the lemon zest. Mix gently until well combined.

5️⃣ Serve immediately 🍴:

  1. Serve the hot risotto in beautiful, deep plates. Garnish with the reserved asparagus tips, Parmesan shavings, and a drizzle of olive oil. Add a touch of freshly ground pepper to finish.
