Ingredients :
For the leg of lamb:
🍖 1 leg of lamb, boneless or with bone (approximately 2 kg)
🧄 4 cloves of garlic, sliced or crushed
🌿 6 sprigs of fresh rosemary
🫒 3 tablespoons of olive oil
🧂 Salt and pepper, to taste
🍷 150 ml of dry white wine or stock for cooking
For the sautéed potatoes:
🥔 1.5 kg of potatoes (new potatoes or firm potatoes)
🧅 1 large chopped onion (optional)
🌿 2 sprigs of fresh thyme or rosemary
🫒 2 tablespoons of olive oil
🧈 20g of butter (optional for extra indulgence)
🧂 Salt, pepper and a pinch of paprika (optional)
Instructions :
1️⃣ Prepare the leg of lamb 🍖:
- Preheat the oven to 180°C (fan oven).
- Make incisions in the leg of lamb with a small knife. Slip the garlic slivers and a few rosemary leaves into each incision. This will flavor the meat from the inside.
- Brush the entire leg of lamb with olive oil, then season generously with salt and pepper and sprinkle with fresh or dried rosemary.
2️⃣ Pre-cooking and cooking juices in the oven 🍷:
- Place the leg of lamb in a large roasting tin (or in an oven-safe stainless steel pan – see below). Pour the white wine or stock into the bottom of the tin to prevent the meat from drying out during cooking.
- Place the leg of lamb in the oven and cook:
- 1 hour 15 minutes to 1 hour 30 minutes for pink meat (internal temperature: 55-60 °C)
- 1.5 to 2 hours for well-cooked meat (internal temperature: 65-70 °C)
- Baste the leg of lamb regularly with the cooking juices for an even more tender and flavorful result. If necessary, add a little water or stock during cooking.
3️⃣ Prepare the sautéed potatoes 🥔:
- While the leg of lamb is in the oven, wash and cut the potatoes into chunks without peeling them (unless they are large). Cook them in boiling salted water for 8 to 10 minutes. Drain them and let them dry slightly.
- In a stainless steel pan (oven-safe), heat the olive oil and add the pre-cooked potatoes. Add the sprigs of thyme or rosemary and a little butter for extra flavor, then fry them over medium heat until they are golden brown and crispy (about 10 minutes).
- If needed, you can finish cooking the potatoes in the oven by placing them directly in a stainless steel pan with the leg of lamb. Tip: Thanks to their oven-safe design, our pans make perfect, hassle-free cooking easy. 😍
4️⃣ Serve and enjoy 🍴:
- Remove the leg of lamb from the oven and let it rest for 10 minutes under a sheet of aluminum foil before carving. This step allows the meat to relax and become even more tender.
- Arrange the carved leg of lamb on a large serving platter, accompanied by the crispy sautéed potatoes. Drizzle some of the cooking juices over the meat for extra flavor.
