  • 🌿 1 teaspoon of ground cumin
  • 🥚 4 eggs
  • 🫒 2 tablespoons of olive oil
  • 🧂 Salt and pepper, to taste
  • 🌿 A few sprigs of fresh coriander or parsley for garnish

Instructions :

  1. Prepare the vegetables 🍅🫑 :

    • Dice the tomatoes. Finely chop the onion 🧅 and the pepper 🫑. Mince the garlic 🧄.
  2. Sauté the vegetables 🧄 :

    • Heat the olive oil 🫒 in a stainless steel pan. Fry the onion and garlic for 2 to 3 minutes, until translucent.
  3. Add the tomatoes and peppers 🍳 :

    • Add the tomatoes and bell pepper to the pan. Season with paprika, cumin, salt, and pepper. Simmer over low heat for 10 to 15 minutes, stirring occasionally.
  4. Add the eggs 🥚 :

    • Make small wells in the sauce and crack an egg into each one. Cover the pan and cook over low heat for 5 minutes, until the whites are set but the yolks are still runny.
