🧾 Ingredients

1 large courgette
-
120g of canned corn (drained)

1 egg
-
40 g of flour
-
1 tbsp grated parmesan cheese (optional)

1 clove of chopped garlic
-
A few sprigs of chopped chives or parsley

Salt & pepper

2 tablespoons of vegetable oil (sunflower or mild olive)
👨🍳 Instructions – perfect cooking in a stainless steel pan
🥒 Step 1: Prepare the pancake batter

Grate the courgette and squeeze it in a clean cloth to remove as much water as possible.

In a bowl, mix together: courgette, corn, egg, flour, garlic, herbs, salt, pepper and parmesan.

Form small mounds of dough using a spoon.
🔥 Step 2: Preheating the stainless steel pan

Heat your stainless steel pan to 2/3 power .

Let it heat up empty for 1 to 2 minutes .

Do the water drop test : if it forms a bead that slides on the surface → the pan is ready ✅.
🫒 Step 3: Oil and cook

Add the oil to the hot pan. Wait 30 seconds.

Place the pancakes, spacing them apart.

Do not touch them for 4 to 5 minutes : this is the time needed for the Maillard reaction to create a golden crust without it sticking.
🔄 Step 4: Turn over

Gently turn the pancakes over. Cook for another 4 to 5 minutes on the other side until golden brown.
🍽️ Step 5: Serve

Drain briefly on absorbent paper.

Serve hot or warm with a light sauce (lemon yogurt, tzatziki...) or a seasonal salad.
