A quick and seasonal dessert: pan-caramelized peaches with a touch of vanilla and slivered almonds. An easy recipe to prepare in a stainless steel pan.

🧾 Ingredients

2 ripe peaches
-
1 tablespoon of coconut sugar (or brown sugar)

1/2 vanilla pod (or a few drops of extract)

10 g of butter
-
1 tablespoon of slivered almonds (or walnuts, hazelnuts…)

(Optional) A squeeze of lemon juice
👨🍳 Instructions – perfect cooking in a stainless steel pan
🔥 Step 1: Prepare the pan

Heat the stainless steel pan over medium/high heat (2/3 power) .

Wait 1 to 2 minutes, then perform the water drop test .

The drop should form a ball that rolls: your pan is ready ✅.

🧈 Step 2: Add the fats and sugar
-
Lower the heat slightly. Add the butter to the hot pan.
-
Once melted, add the sugar and vanilla seeds. Stir until lightly caramelized (1 to 2 minutes).
🍑 Step 3: Cooking the peaches

Cut the peaches in half or into quarters.

Place them in the pan, flesh side down.

Cook for 3 to 4 minutes without stirring , to brown the fruit well (Maillard reaction).

Turn them over and continue for another 2 to 3 minutes skin-side down, until they are melted.

Add the slivered almonds and a squeeze of lemon juice at the end of cooking.

Serve hot or warm with a scoop of vanilla ice cream or plain yogurt.
